This time last week I was merrily collecting sap from the Birch trees around the place, and it seemed like it would never stop. Cue Simon on monday, arriving just in time for it to stop. Not a drop. A couple of cold nights seems to have convinced the local Birch that perhaps it was too early.
Obviously the ambient temperature has to reach a certain point before it really begins to run.
Anyhow, after a couple of warmish days and no frost, the sap is now running again in earnest, and with any luck we’ll get a fair bit collected before it slows again.
