Soup!
We grow a lot of squash here, it seems to like our polytunnel. Our favourite so far is Burgess Buttercup, which grow squashes to a decent but manageable size and can be quite prolific. They also store beautifully, so we don’t tend to eat them until the dark days of January and February, when sometimes you just need a decent, cheering soup on a wild oul day.

High summer at Birch Eco Cottage – off grid self catering
now opened up the circular walk around the woodlands opposite the cottage, and we’re always happy to show guests around the gardens, and introduce them to the horses.
Escape to the Country
This week we did a bit of filming for a segment on the BBC programme ‘Escape to the Country’, telling Ruth and Stuart about our smallholding as they look for property in Northern Ireland. It was good fun, and an opportunity to show off Birch Cottage, but it’ll be 9 months before the programme airs. Tell us is you see it, as we don’t have a TV….

It boasts the lowest carbon footprint of any self catering property here, without compromising comfort.

The house truck features a unique upcycled pallet wood interior, well equipped kitchen, wood powered shower, and of course, an outside compost loo with a view. Harriet even has her own decking area where you can sit and admire the view, and is powered by solar electricity.
